Sunday breakfast alert: Banana pancakes

Since only professional riders can ride competitions at the moment, we might all have more time to eat a proper breakfast on Sunday morning before hacking or riding our horses at home. Therefore we asked Stephanie Bex, a food blogger for Belgiums national cooking channel to give us her best recipe for a Sunday-morning-sports breakfast!

“My absolute favorite are banana pancakes. You don’t need a lot of ingredients and it’s perfect to start a day of riding or working at the stables”, she tells us polska-ed.com. “I usually serve them with fruit and a spoon of honey”.

What do you need?

2 eggs
2 ripe bananas
1 tsp baking powder
1 tsp cinnamon
coconut oil

What do you do?

Crush the bananas in a large bowl
Add the eggs, baking powder and cinnamon
Mix well (but there can certainly still be chunks in the batter)
Melt a spoonful of coconut oil in a pan
Add a spoon of the batter
Bake nicely on both sides (+ – 2 minutes on each side)
Repeat until the batter is finished
Serve with fresh fruit and honey
Ready!

Tip: Do not make the pancakes too big, otherwise they will fall apart.
