Post Easter Pancakes!

Easypeasy sweet American Pancakes

Ingredients:

  • 1 spotty banana
  • 200 g oats
  • 200 ml milk (I recommend almond milk)

Directions:

Blend all ingredients together.

Heat a nonstick pan over medium heat with a very small amount of coconut oil if necessary

Once your pan is hot enough, cook each pancake for about 2 minutes until bubbles form on the surface of the pancake. Flip and cook another minute or two until golden brown.

 

 

 

 

Spinach pancakes with a yoghurt garlic dressing

I got inspired by the restaurant WILD Project in Antwerp for these pancakes. One of the best restaurants in town if you ask me.

Ingredients

  • 200 g chickpea flour (or other)
  • 200 ml unsweetened soy milk
  • 1 handful of spinach
  • 1 tsp baking soda

Directions

  • Blend all ingredients together
  • Heat a nonstick pan over medium heat with a very small amount of coconut oil if necessary
  • Once your pan is hot enough, cook each pancake for about 2 minutes until bubbles form on the surface of the pancake. Flip and cook another minute or two until golden brown.
  • Serve with the dressing and some greens if desired.

 

Yoghurt garlic dressing

Ingredients

  • 3 tbsp unsweetened soy yoghurt
  • Garlic powder (or ½ fresh garlic clove, pressed)
  • Pepper to taste
  • 2 tbsp of cut chives

 

Directions

  • Whisk all ingredients together
